As Maureen said, you can improvise with a bowl over simmering water (don't let the bowl touch the water). With a double boiler, you're using diffused heat and it makes for more gentle cooking. <br /><br />It still looks pretty. I love all of the recipes in it and picked this particular one because my husband loves chocolate and loves his bananas and loves pie! So I figured this would be perfect!!<br /><br />I am not quite sure why it didn't set I was sure bummed because it looked so pretty for the end result. Maybe because I put the mixture in the blender?? There was no other way to get those flour lumps out without doing that and those lumps drive me nuts!!<br /><br />I however did not sift the flour so maybe that was a factor of why the lumps were there and why I had to put it in the blender and why it was maybe not thick enough to set!<br /><br />I added the egg yolks right in the pan do if I scrambled them in a separate bowl and the. Added it to the chocolate mix it might have been better. You really have a way with blog design :)<br /><br />The pie-I think I have that same booklet! I do wonder if the extra beating might have factored into it not setting, but I really don't know. We don't have a double boiler either, so we just put a stainless steel bowl over a pot of boiling water, and melt chocolate that way.
